Visit Salt Lake hosted an exclusive private dinner at Evo Hotel for Sundance leadership, government officials, and key cultural dignitaries. The evening was designed as a strategic gathering, bringing together decision-makers and creative leaders in an environment that reflected Utah’s sophistication, innovation, and hospitality at the highest level.

The Menu

Dinner was presented as a composed three-course plated experience rooted in seasonality and contrast. Guests began with a Summer Beet & Carrot Salad with goat cheese quenelle and citrus vinaigrette, followed by a “Fire & Ice” entrée pairing chili-crusted flat iron steak with sweet potato purée alongside seared halibut finished with blueberry, cucumber, and Meyer lemon gremolata. Honey Apricot Ice Cream with almond crumble closed the evening. The menu was intentional, elevated, and calibrated for a room of influential leaders.

The Bar

The bar program introduced controlled moments of sensory detail. Coconut Mojitos and NO-jitos were finished with a smoke element, while the Blood Orange Smash featured a flame-lit dehydrated orange garnish. An illuminated ice bar installation anchored the room, adding texture and visual impact without distracting from conversation.

The Style

LUX Floral & Design transformed the venue with suspended metal orb installations layered in flame-toned protea, celosia, dahlias, and heliconia balanced with cool blue delphinium and thistle. Crystal chandeliers, layered lounge groupings, and fog-emitting ice bar florals created a cinematic yet controlled environment. Every element was designed to support meaningful dialogue while demonstrating the level of hospitality Utah brings to the national stage.
