It’s the season for BBQs and campfires, and no campfire is complete without s’mores! While the standard combination of graham crackers, marshmallows, and chocolate is tried and true and delicious, we’re all about innovation. Introducing the cookie s’more! The cookie s’more is the perfect end of summer treat to try out at your next campfire or BBQ. 

Thick Chocolate Chip Cookie Recipe

  • 3 cups all-purpose flour
  • 1 cup butter, softened
  • ¾ cup sugar
  • 1 cup packed brown sugar
  • .5 oz cream cheese
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups chocolate chips

Cream together butter and sugars, then add eggs and cream cheese. Once blended together, stir in remaining ingredients to make a stiff dough. Scoop dough into small balls and place on a cookie sheet. Bake at 350º for 8-12 minutes until the edges of the cookies are golden and the center is soft. 

LUX Marshmallows

  • 3 tbsp unflavored gelatin
  • ½ cup cold water
  • 1 ½ tbsp vanilla extract
  • ¾ cups water
  • 1 ½ cup sugar
  • 1 ¼ cup corn syrup
  • Pinch of salt

Spray a cookie sheet with cooking spray. Bloom gelatin in vanilla and cold water. Combine syrup, sugar, water, and salt, don’t stir. Bring ingredients to a boil (250 degrees). In a mixer, pour syrup mix into gelatin and beat until thickened and glossy. Spread mixture onto cookie sheet, cover, and let sit for 6-8 hours before consuming.
